This recipe is another one I discovered from the ‘Honestly Healthy for Life’ recipe book, by Natasha Corrett and Vicki Edgson.
Ingredients:
- 2 tbsp sunflower oil
- 4 large carrots
- 1 large courgette
- 4 spring onions
- 100 g halloumi
- 1 garlic clove
- 20g red onion
- 40g rice flour
- 1 egg white
*you can add coriander and lemon zest and juice to this recipe if you’d like, however after trying and testing I feel there is enough flavour without this.
Instructions:
Step 1:
- Heat 2 tbsp of oil in a pan, that you will add to the mixture you will create
Step 2:
- Grate the carrots, courgette, onion, and halloumi
- Crush the garlic clove
- Chop the spring onions (keep them thin)
Step 3:
- Mix all of the above together
- Then add the rice flour, oil and egg white
Step 4:
- Pre heat the oven to 170 degrees celsius
Step 5:
- Take a handful of the mixture, squeeze out the juice and make a small patty shape
- Make four of these at once and then heat 1 tbsp of oil in a frying pan
- Place the four patties into the frying pan and lightly fry them on both sides (this is to ensure that they will stay together before going in the oven)
* you will have to do this 3 or 4 times as the mixture will make 10-12 patties (size dependent)
Step 6:
- Once all have been fried you can put them in the oven to cook for 15 minutes
Step 7:
- Remove from the oven and serve
Serving suggestions:
– I have served mine on a bed of spinach sprinkled with quinoa
– Any leafy green of your choice will work with this: rocket, lettuce, spinach etc.
-If you wish to make a dressing Natasha and Vicki recommend mixing the below to spread over a bed of rocket or other leaves of your choice:
4 tbsp olive oil
Juice of 2 limes
1 tbsp agave syrup
