Chicken in the Oven

Hey all! Adding another chicken recipe to the list for you…

This one is clean, simple and can be open to interpretation – this is because you can choose to flavour the chicken however you wish. My choice here is spring onions and garlic oil.

Some of my flavouring suggestions are:

– garlic oil & spring onion
– sweet chilli
– peri-peri sauce
– black pepper & red onion (if you use red onion it’s best to add these after half the cooking time so that they don’t burn)
– lemon and thyme

*whichever flavour you go for, be sure to spread the sauce on the chicken first adding any other flavouring e.g. pepper etc. on top of this after (so it sticks!)

Ingredients:

  • Chicken Breast Fillets (1 per person)
  • Spring Onions
  • Garlic Salt
  • Salt
  • Pepper
  • Garlic infused oil

Step 1:

  • Pre-heat oven to 180 degrees celsius
  • Lay fillets in oven tray on silver foil

Step 2:

  • Pour garlic oil over the chicken
  • Chop spring onions and place them over the chicken and in the tray

Step 3:

  • Sprinkle garlic salt over the chicken

Step 4:

  • Cover the chicken in foil
  • Put the chicken in the oven and cook for approx. 20 – 30 mins.
  • *the foil keeps the juice and flavour in, and stops the chicken from roasting

You can serve with rice / veg / potatoes / stir fry veg / salad
