I was so not feeling making an elaborate meal this week (I guess this is proof that I really am a lazy girl in the kitchen). I just wanted to watch The Bachelor and not be a slave to my recipes.
What do you do when you want something easy, healthy and VERY little fuss?
Cauliflower crust pizza! It’s gluten free and can totally be dairy free if you want.
The easiest and most cost efficient thing to do was use what I already had:
- Cauliflower Crust from Trader Joe’s
- Vegan Kale Pesto from Trader Joe’s
- Mozzarella cheese
- Sun dried tomatoes
- Truffle oil
For the crust –
The directions on the box are pretty solid. I personally don’t like my pizza crust crispy (I love doughy textures), but if you like it crispy, cook it on each side for a bit longer.
While your crust is cooking, you can take this time to chop up your toppings for your pizza.
For your toppings –
I don’t like marinara sauce in the least bit, so I used Trader Joe’s Vegan Kale Pesto. I’m lazy and I didn’t want to make pesto from scratch again.
Once your crust is cooked, layer on your base (in my case, pesto). I like things saucey, so I was generous.
Then add your thin slices of cheese (if you want yours super cheesy, make your slices bigger and pile on more).
I made the mistake of not thinly slicing my toppings and making them too big. Thinly slice the veggies of your choice and layer up! Lightly drizzle your truffle oil.
Just keepin’ it real over here.
Broil for a few minutes until your sauce starts to bubble. Take it out of the oven and then you can add your sun dried tomatoes.
Pair your pizza with a salad or roasted veggies (we did broccoli) and serve for a healthy dinner!
