Easy Tomato Soup Recipe

 

As it’s still winter (well for us Londoners it’s cold – not like LA at the moment!) I thought a good soup recipe was in order.

You can keep warm and eat healthy too! 

This is great as a starter before your meal or even as a meal in itself – just remember to eat in moderation 🙂

**My tip is to make this soup one day early as it’s a lot tastier on day 2**

Ingredients:

  • x 1 pack of celery
  • x 8 carrots
  • x 2 small potatoes
  • x 4 onions
  • x 4 tins of Italian Chopped Tomatoes (400g per tin)
  • x 1 carton of Passata (500g)
  • x 2 bay leaves
  • x 2 beef stock/vegetable stock cubes
  • Pure Sunflower Oil
  • Sea salt
  • Black pepper

Instructions:

Step 1:
  • Peel and cut all vegetables except the potatoes

Cut up veg

Step 2:
  • Add oil to saucepan (there is no specific amount, just enough to cover the bottom of the saucepan)
  • Heat saucepan on medium heat
  • Add all vegetables (except potatoes)
  • Cover pan with lid and heat until vegetables are soft
Put veg in saucepan
Step 3:
  • Add Italian Chopped Tomatoes and Passata
  • Add stock cubes
Step 4:
  • Add cold water (it should be enough to cover all ingredients in the pan)
Step 5:
  • Add both bay leaves
  • Add salt and pepper (there is no specific amount; it is until the taste is right for you)
*remember you can always add more salt/pepper when having your soup so no need to overload at this point
Add tomatoes
Step 6:
  • Bring to boil slowly
Step 7:
  • Simmer for 1 hour (keep the lid on the pan)

Step 8:
  • Remove bay leaves

Step 9:
  • Blend the soup

Step 10:
  • Peel potatoes and add them (whole) once soup has been blended
*this helps to thicken the soup up

Your soup is now ready! All you need to do is reheat when required.
