Low Carb Taco Boats Recipe With Milk & Eggs

The Lazy Girl In The Kitchen escapades continue thanks to Milk & Eggs. I’ve been doing a few Milk & Eggs hauls and everything I’ve ordered from them, I’ve loved.

I’ve seen so many different types of taco boats on Instagram and have been dying to try them. We know by now I’m not a huge pizza eater so I wasn’t going to try pizza boats. Being a Cali girl, I LOVE my Mexican food and thought it could be cool to do taco boats. 

Milk & Eggs has a huge variety of vegan meat substitutions. I use the Beyond Meat brand because it’s the cleanest. I ordered their beef crumbles since I’m allergic to red meat. I ordered 4 large zucchini, organic avocados, pepper jack cheese, and onions also from the site for this recipe. 

Full disclosure: I didn’t LOVE the Beyond Meat beef crumbles. While I found their burger patties to be AMAZING, the crumbles came out quite dry and the texture is a little off. If you can do this with ground chicken, I think it will be even better. Still, the recipe came out delicious and everyone loved it. I’m just a super picky bitch. 

Ingredients: 

  • Avocado oil spray
  • Olive oil spray
  • 4-5 zucchinis
  • 1/2 a medium sized onion, chopped
  • 4 mini bell peppers, chopped
  • 1 package Beyond Meat beef crumbles 
  • Taco Seasoning
  • Optional: Pepper jack cheese (or cheese of your choice), shredded

 

Directions: 

Preheat oven to BAKE at 350F. 

Slice your zucchini in half and scoop out the middle (you can use a spoon for this). 

Spray your pan lightly with avocado oil and lay out your zucchini halves on the sheet. Spray the tops with olive oil (tastes better). Bake for 15 minutes give or take a few minutes. 

Once that’s in the oven, you can make your “taco meat.”

In a medium or large sized pan, spray the oil of your choice. Let it heat for a minute before you add your meat. Once you’ve added your meat, add your taco seasoning and mix well. I would suggest maybe adding a few tablespoons of water to the mixture as well to make the meat juicier. Once that simmers for a minute or two, add your chopped bell peppers and onions. Feel free to add any other veggies of your choice as well. Cook for 2 more minutes. 

Add your meat mixture to the zucchini boat.

If you want cheese, add your shredded cheese on top and set your oven to BROIL on low for 2 minutes. 

Take out of the oven and let cool for a few minutes. 

You can serve with homemade guacamole and chips, or garnish with slices of avocado.
