No One Can Resist a Tasty Schnitzel

Schnitzel…a food that is full of texture and taste, although fried, still healthy in moderation! Plenty of nutrients and when eaten with the right sides you can’t go wrong.

My recipe is pretty quick and easy, making this a meal you can put together in advance of when you want to eat it or just because you fancy!

Ingredients:

  • Chicken Fillets (the amount you need will depend on how many you are cooking for)
  • Matzo Meal
  • Minced Garlic
  • Sunflower Oil
  • x 2 eggs
  • Sea Salt
  • Black Pepper

Instructions:

Step 1:

  • Mix egg with minced garlic, salt and pepper in one dish (the amount you use will depend on dish size but use the eggs as a guide – you don’t want to drown out the egg with the other ingredients, as they are for flavour)

Step 2:

  • Pour matzo meal in a another dish – to cover the base of the dish

Step 3:

  • Place raw fillets in egg mixture and make sure they are fully covered

Step 4:

  • Now dip the fillet in matzo meal – be sure to cover generously

Step 5:

  • Heat oil in pan (add enough oil so it will cover the whole chicken fillet)
  • Ensure oil is hot – you can test this by seeing if the matzo meal sizzles when you put a bit in the oil

Step 6:

  • Place chicken fillet in oil

Fry it

Step 7:

  • Once it turns golden it is done (this will happen after 7-8 mins depending on the heat)

Step 8:

  • Take it out the pan and place on kitchen roll so that the remaining oil will soak up

Step 9:

  • Serve, adding veg of your choice
