Salmon Teriyaki and Veggie Stir Fry Recipe

Not long until Christmas now! I will be giving you a special Turkey recipe next week :)

This week’s recipe is Salmon Teriyaki. I have provided you with a suitable amount to cook for one (although the amount of veggies would probably feed two as I always have leftovers!)
If you are cooking for more than one then just add one piece of salmon per person and double the veg recipe (doubling the veg quantity will be enough for 5-6 people).
 
This is a flavoursome meal that is easy to prepare and doesn’t take long to cook either!

Salmon Teriyaki & Veggie Stir Fry

Ingredients:

  • x 1 piece of salmon
  • x 1 zucchini (courgette)
  • x 5 mushrooms
  • x 3 tablespoons of soy(a) beans
  • x 2 handfuls of spinach
  • x 1/2 an onion
Ingredients for Teriyaki marinade (I tend to play around with the measurements according to my own preference, you can do the same):
  • Soy Sauce
  • Sea Salt
  • Black Pepper
  • Pure Sunflower Oil
Recommended that you also have:
  • A Wok for the veggies — if you don’t have a wok you can use a regular pan
  • A Griddle for the salmon — you can also use a pan for this or put it in the oven

Instructions:

Step 1:
  • Remove any skin from salmon
  • Marinade salmon in Teriyaki for 20-30 mins

Step 2:
  • Whilst the salmon marinades chop vegetables & begin step 3
Step 3:
  • Add all vegetables (except spinach) to wok (medium heat) with a small drop of pure Sunflower Oil
  • Once the veggies start to heat and soften, add Soy Sauce (amount will vary depending on amount of veggies) – ensure it is enough to cover the veg

  • Mix the veggies while it’s cooking
*hint – if using a wooden spoon don’t leave it in the wok as the veg cooks…it absorbs the flavour!
Step 4:
  • Whilst the veg is cooking, add a small amount of pure sunflower oil to the griddle and pre heat this for approx. 1 minute
  • When the oil is hot it will appear loose
  • Once you see this you can add the salmon and cook it on medium heat
*If you want to cut the salmon into smaller pieces before cooking then do this before adding it to the griddle
  •  Add any leftover teriyaki marinade to the griddle (if it appears there isn’t much add some more for extra flavour)

Step 5:
  • Add salt and pepper to the veg
  • Add the spinach

As the salmon turns pink around the edges turn it over so both sides cook evenly

Step 6:
  • Once salmon is cooked turn the griddle off and let it cool for 1 minute
* the salmon should take approx. 6-8 mins to cook on a medium heat
  • Turn off the veggies at same time
* the veg should take approx. 10 mins to cook on a medium heat

Step 7:
  • Plate and serve!
Any leftover veg can be added to a salad the following day!
