Here was the menu we planned — everything was natural and healthy:


  • Babaganoush

Main Dishes:

  • Salmon hand rolls
  • Raw vegan cauliflower summer salad


  • Raw vegan ice cream

Guess how much all of this cost to make? [typography font=”Cantarell” size=”14″ size_format=”px” color=”#ff6666″]Under $30[/typography] ! And we had so much leftover.

What you’ll need:

  • 1 good knife
  • Food processor
  • Ice cream maker
  • Cutting board
  • Aluminum foil



  • 2 lage eggplants
  • Garlic cloves
  • Tahina
  • Lemon
  • Olive oil

Salmon hand rolls:

  • Salmon
  • Nori
  • Alfalfa sprouts
  • Tri-color bell peppers
  • 2 avocados
  • 2 large cucumbers
  • Coconut aminos
  • Lemon juice
  • Ginger powder
  • Cashew butter

Raw vegan cauliflower rice

  • 1 whole cauliflower
  • 2 red apples
  • 1 bundle of leeks
  • Parsley
  • Walnuts
  • 3 limes
  • Coconut aminos
  • Tahina
  • Ground Ginger

Raw vegan ice cream:

  • 1 cup cashews
  • stevia
  • coconut nectar or agave nectar

To make the [typography font=”Cantarell” size=”14″ size_format=”px” color=”#ff6666″]babaganoush[/typography] :

Step 1:

  • Take the eggplant and poke a bunch of holes in it
  • Cut garlic gloves in half vertically and rub olive oil on them. Place face down on aluminum foil and wrap in foil.
  • Pop eggplant in the oven and broil for about 20 min

Step 2:

  • Once the eggplant is ready, let cool
  • Place the cloves face down on aluminum foil, wrap it and put in the oven for 30-40 minute at 425 degrees
  • While cloves are in the oven and eggplant has cooled, squeeze the eggplant to let out the water
  • Take off the skin

Step 3:

  • Place the eggplant in the food processor
  • Add tahini, lemon juice, garlic and eggplant
  • Blend until smooth or at the consistency you desire

Step 4:

  • Add some salt and pepper and enjoy with cut up veggies of your choice!


To make [typography font=”Cantarell” size=”14″ size_format=”px” color=”#ff6666″]salmon hand rolls[/typography] :

Step 1:

  • Place salmon on aluminum foil
  • Squeeze lemon juice and sprinkle ginger powder on the salmon

Step 2:

  • Broil salmon on high for about 10 minutes

Step 3:

  • While salmon is in the oven chop up your bell peppers, cucumber and avocado

Step 4:

  • Once your salmon is ready, take a sheet of nori and start laying your veggies in a straight line vertically
  • Then layer the salmon on top of your veggies


Step 5:

  • Roll your nori, salmon and veggies to make the hand roll
  • Enjoy!


To make the dipping sauce:

  • Lemon juice
  • Coconut aminos
  • Cashew butter
  • Ginger powder


To make the [typography font=”Cantarell” size=”14″ size_format=”px” color=”#ff6666″]raw vegan cauliflower salad[/typography] :

Step 1:

  • Cut up your cauliflower and put aside the florets

Step 2:

  • Add the cauliflower to the food processor and blend until it looks like snow

Note: The process is the same for when you’re making cauliflower rice!

Step 3:

  • Once your cauliflower looks like snow, transfer it from the food processor to a bowl
  • Chop up the leeks into very small pieces and add to the bowl


Step 4:

  • Cut up your apples into small chunks
  • Add to the bowl

Step 5:

  • Chop your parsley and add to the bowl

Step 6:

  • Add your walnuts
  • Mix all ingredients together

Step 7:

  • Make your dressing by mixing the juice of your 3 limes, coconut aminos, 1 tablespoon tahina and 1 tea spoon ground ginger
  • Mix everything together and enjoy!



To make the [typography font=”Cantarell” size=”14″ size_format=”px” color=”#ff6666″]raw vegan ice cream[/typography] :

  • Blend 1 cup cashews, 4 cups water
  • Sweeten with stevia and coconut nectar
  • Place in the ice cream maker for 15-20 minutes
